My Daily Dose of Autism

Gluten free test kitchen opened today.
The menu:

Chicken Nuggets
Blue Hawaiian Smoothie

I figured while Carter was distracted with his homemade Watermelon Freezie Pop, I could try out the chicken nuggets recipe I found.


Ok, he’ll be out of my hair for a while.
Time to get testin’.

And look…..there’s Carter. Already finished his freezie pop and ready to assist.



I fried the nuggets in coconut oil and then I fried some in olive oil. I also coated some of the chicken with gluten free seasoned coating and put it in the oven. Gotta have options!


They were actually pretty good. The ones that were baked tasted better than the others.

But the real verdict comes from Little Chef.

So, what did he think?

He tried the one fried in coconut oil and olive oil and he turned them both down! Took them right out of his mouth, observed them (because they looked like nuggets), and put them back on the plate (because they just didn’t taste like chicken nuggets).

He didn’t try the baked chicken nuggets. I ended up in the opposite direction and made him a grilled cheese sandwich (not on GF bread).

I did serve him a Blue Hawaiin smoothie with his sandwich.

A delicious blend of blueberries, a frozen banana, and coconut milk (strained for his issues with textures).

Well, he decided he didn’t like that either.

Epic fail!
